Ingredients

For the Yakhni (Chicken Stock)

  • 750g bone-in chicken pieces
  • 4 cups water
  • 2 bay leaves
  • 4 cloves
  • 2 black cardamom pods
  • 1 cinnamon stick
  • 1 tsp fennel seeds
  • 1 tsp ginger-garlic paste
  • Salt to taste

For the Biryani

  • 1 cup whisked yoghurt
  • Saffron soaked in warm milk
  • Fresh mint leaves
  • Fresh coriander leaves
  • Ghee (as required)
  • Rose water (for finishing)
  • Whole spices for marination: 1 tsp cumin, 2 green cardamom, salt & pepper

Step 1 - Make the Yakhni

  • Place bone-in chicken in a deep pot with 4 cups of water.
  • Add bay leaves, cloves, black cardamom, cinnamon, fennel seeds, ginger-garlic paste, and salt.
  • Simmer on medium-low heat for 30 minutes until the stock is deep, golden, and fragrant.
  • Strain the stock and set aside. Reserve the cooked chicken separately.

Step 2 - Marinate the Chicken

  • Combine the reserved chicken with whisked yoghurt, fresh ginger-garlic paste, whole spices, and salt.
  • Marinate for a minimum of 1 hour (overnight gives deeper flavour).

Step 3 - Cook the Chicken

  • Heat ghee in a heavy-bottomed pot. Add the marinated chicken and cook on medium heat until the masala dries and oil separates. Set aside.

Step 4 - Par-boil Rice in Yakhni

  • Bring the reserved Yakhni stock to a rolling boil. Add soaked Kohinoor Classic Gold Basmati Rice.

Step 5 - Layer the Biryani

  • In the same pot, layer: cooked chicken → par-boiled rice → birista (fried onions) → fresh mint and coriander → saffron milk → a generous drizzle of ghee.
  • Repeat layers if the pot allows.

Step 6 - Dum Cook

  • Seal the pot tightly with dough or foil. Place on the lowest flame and dum cook for 25-30 minutes.
  • Drizzle rose water before sealing.
  • Rest for 10 minutes before opening the seal.
