Method

Step 1: Marinate the Chicken

Marinate chicken for at least 2 hours (overnight gives deeper flavour). Combine yoghurt, ginger-garlic paste, spices, oil, and fried onions. Mix well so spices coat every piece. Longer marination allows spices to be fully absorbed. Avoid watery yoghurt and do not skip the fried onions.

Step 3: Layer the Biryani

  • Add a layer of parboiled rice to the top.

  • Drizzle saffron milk, ghee, fried onions, and fresh herbs over the top.

Step 4: Dum Cook

  1. Seal the pot using dough (or use foil with a tight-fitting lid).
  2. Start on high heat for 5 minutes, then reduce to low and cook for 20-25 minutes.
